Eggplant



I love the beautiful brilliant color of eggplant!  It is an incredibly versatile vegetable that has been cultivated for centuries.  I have grown eggplant in my garden several times, but usually don't cook with it all that much, so haven't bothered to plant it for several years now.  I do enjoy it breaded and fried and in Eggplant Parmesan, but don't eat fried foods very often and there are plenty of other options to use for the Parmesan type dishes.  

So, do you have a favorite way to use eggplant?  I'm open to suggestions, and if I find the right one(s), I may just plant some eggplant in my garden again this year.

  1. Yes, I have an eggplant recipe for you! My sister's Eggplant dressing. Take two medium or one large eggplant. Peel it, cut it up in small cubes, place in small amount of water with a little salt and boil until transparent and tender. Meanwhile, brown one pound of hamburger with onion & bellpepper and seasoning to taste. Cook one cup of rice. When everything is done, mush the eggplant a little in the water, then mix everything together in a large mixing bowl. Layer in large casserole dish mixture, grated cheese for three layers ending with cheese on top. Bake in 350 oven to melt & brown cheese. Even folks who don't eat eggplant will eat this. Barbara

  2. Not only is purple my favorite color (and eggplant purple is one of a kind), but I love the eggplant salad my mom used to make. It was mashed and mixed in with a bunch of other veggies (it's about the only description I can think of) and it was delicious. Very much enjoyed reading your post, Marcy.
