Kale


Kale has been proclaimed by many as one of the world's healthiest vegetables.  Wikipedia describes kale, or borecole, as a vegetable with green or purple leaves in which the central leaves do not form a head.  It is considered to be closer to wild cabbage than most domesticated forms of cabbage. 

Not only is it high in Vitamin C and Vitamin A and Potassium, but it is also said to be rich in antioxidants, anti inflammatory nutrients, and anti cancer nutrients.   I know that it is popular to include Kale in green smoothies along with fruit and other nutrient dense foods, and I've seen recipes for salads and chips, and I think I bought some once several years ago, but have not made it a regular part of our diet.   I have a very long to-do list on this beautiful spring Saturday, and one of them is to find some Kale to plant in my garden.

  1. Hi Marcy - I love kale and bought some yesterday, as I don't have a garden. I just very lightly steam mine ... and serve it with some butter .. it is very good - cheers Hilary

    1. It does sound good, Hilary. I was able to buy some Kale starts at the Nursery on Saturday, but I haven't had time to set them into the garden yet. We'll see how the family likes it. :)

  2. Yeah, I'm not so much a kale eater. I like carrots, peas, green beans, asparagus and so many others...but not kale. I figure you should eat what you love and supplement where necessary.

    1. I agree with eating what you love, Crystal. But I enjoy trying new things and experimenting a bit too. We'll see how the Kale experiment goes!
